I'm considering buying a GS911WiFi to use with my 2015 BMW R1200R, but I don't have a Windows box and don't want one.  I have MacBook Air and iPhone.  Can I do the initial configuration of the GS911WiFi, download the software updates, establish the GS911WiFi on my WiFi network, etc. with the Mac?

Yes you can and you can access the maintenance functions via cloud services. If you are able to load a Windows Virtual Machine on the MAC then you can also run the PC App
