Maybe I'm missing something, but are there detailed and specific instructions somewhere on how exactly to customise the display?  I must be looking in the wrong area, but can't find how to do this, and change the display order.

Not in the garage right now with everything plugged in but I have done it on a 2018 R1200 GS. In the KOMBI controller you need to do a deep dive into every menu and submenu to find it but it is there. Good exercise for using the full potential of the GS911.
You need to have XKOMBIHI controller

If your BMW model uses the https://www.hexgs911.com/xkombihi/ display cluster, within the Service Functions you will see the new feature, called Custom Menu Order.
