What happens when BMW "Wonder Wheel" is disabled?

Yes, you'll still be able to adjust the brightness through the ezCAN software, you'll only lose the on-the-move adjustment ability.
We're also looking at a mobile app which should come out at a later stage, this will resolve the issue of adjusting brightness without a wonder wheel or laptop.

Why are you disconnecting the wonder wheel for fitting of the zumo xt?
I have a XT on my RT and I have no need to remove the wonder wheel

I’m not physically removing the wonderwheel itself. But I am using the existing BMW Navigator V power lead to power the XT. The Nav V unit is replaced so there is no longer any communication/ functionality going to the wonderwheel to the Nav unit.
Are you saying you are getting wonderwheel functionality THROUGH your XT unit?

No I don't get anything from the wonderwheel to the XT
I use one of these which keeps everything in place

Although there is two wires for the BMW prep one is for power and one is for the wonderwheel and information
If you intend on keeping the mount in place then I think you would be able to get it to work some how
